If I am a paralegal, will there be a conflict for process serving or being Private Investigator?

I doubt it, Marion, but you may wish to check the law for Texas. The laws for process serving and PI vary from state to state.

(Not a legal opinion, BTW. I am a trained paralegal myself.)
No conflicts within the professions.
Many attorneys have paralegals employed in their office who also serve papers and act as private investigators for the attorney's cases.
Many independent private investigators also serve papers, and have a paralegal background.
